做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干(gàn )的时候加(jiā )入(rù )盐,翻炒均(jun1 )匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
