做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
