做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
