做(zuò )法(fǎ ):春(chūn )笋切成片后加(jiā )少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
