做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀(yún ),加(jiā )入少量(liàng )清水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
