做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
