做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
