做法:洗(xǐ )净宰(zǎi )好鲫(jì )鱼,洗(xǐ )净淮(huái )山(shān )和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小(xiǎo )火(huǒ )煲一个半小时,下盐调味即可品尝。
