做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开(kāi )后转中火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
