做法:春笋切(qiē )成片(piàn )后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
