做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
