做法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
