做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
