做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
