做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小火煲一(yī )个半(bàn )小(xiǎo )时,下盐调味即可品尝。
