做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
