做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一(yī )遍,放两(liǎng )勺油(yóu ),待油六成热(rè )下(xià )鱼(yú ),煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可(kě )品尝(cháng )。
