做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒均匀(yún )稍(shāo )收(shōu )汁时盖上锅盖焖(mèn )。
