做法:春笋切成片后(hòu )加(jiā )少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生(shēng )姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火(huǒ )。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
