做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上(shàng )擦一(yī )遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的(de )鲫(jì )鱼和(hé )其他材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调味即可品尝。
