做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用(yòng )清(qīng )水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两勺油(yóu ),待油六成(chéng )热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其(qí )他(tā )材(cái )料,武火煮沸,转中小火煲一个半小时,下(xià )盐调(diào )味即可(kě )品尝。
