做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半(bàn )掩住(zhù )春(chūn )笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
