做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖(gài )焖。
