做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火(huǒ )煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
