做法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材料,武(wǔ )火煮沸,转(zhuǎn )中小火煲一(yī )个半小时,下盐调味即可品尝。
