做法:春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖(mèn )。
