做法:洗净宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在(zài )锅上擦(cā )一遍,放两勺(sháo )油,待油六(liù )成热下鱼,煎至微黄。煮(zhǔ )沸(fèi )瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
