做法:春(chūn )笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成(chéng )段。锅烧热,倒(dǎo )入(rù )2勺油,放(fàng )入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
