做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
