做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火(huǒ )煮开后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
