做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖(mèn )。
