做法:春笋切成(chéng )片后加少许盐捞出后(hòu )用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
