做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右(yòu )。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入(rù )盐(yán ),翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
