做法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快(kuài )熬(áo )干的(de )时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
