做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬(áo )干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
