做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
