做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上擦(cā )一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎(jiān )煮好(hǎo )的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中小火煲一个(gè )半小(xiǎo )时,下盐(yán )调味即(jí )可品尝。
