做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
