做法:洗净宰好鲫(jì )鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅(guō ),用姜块在锅上擦(cā )一遍,放两(liǎng )勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼(yú )和其他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲(bāo )一个半小时(shí ),下盐(yán )调味即可品尝。
