做法(fǎ ):洗净宰好鲫鱼,洗净淮山(shān )和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂(liè )一(yī )小块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其(qí )他(tā )材料(liào ),武火煮沸,转中小(xiǎo )火(huǒ )煲一(yī )个半小时(shí ),下盐调味即可品尝。
