做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸(jìn )泡,生(shēng )姜切(qiē )片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
