做法:春笋(sǔn )切成片后(hòu )加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
