做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上锅盖大(dà )火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖上锅(guō )盖焖(mèn )。
