做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清(qīng )水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
