做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐(yán ),翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
