做法(fǎ ):春(chūn )笋切成(chéng )片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火。煮到水快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
