做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再(zài )加入(rù )生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖(gài )焖(mèn )。
