做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火(huǒ )。煮(zhǔ )到(dào )水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
