做法:洗(xǐ )净(jìng )宰好(hǎo )鲫鱼,洗(xǐ )净淮山和(hé )薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块在(zài )锅(guō )上擦一遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半小时,下盐调味(wèi )即可品(pǐn )尝。
