做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
